RECIPE: Parfait of Greek Yogurt, Cherry Compote & Granola

INGREDIENTS


1 cup plain Greek yogurt (non-fat)*

¼ cup of your favorite granola, equivalent to 125 calories

¼ cup of homemade cherry compote – recipe below


DIRECTIONS


Assemble parfait by layering yogurt, granola, and compote. You can also pour the compote over the yogurt and sprinkle with the granola.


*Variation You can also use non-fat vanilla yogurt if you don’t like the taste of plain yogurt. Just add a little less cherry compote.



Cherry Compote


(Makes ¼ cup)


½ cup fresh pitted cherries (about 12 whole cherries)

3 tbsp water

2 tsp agave

½ stick cinnamon bark

½ anise star


Directions

  1. Combine all the ingredients in a small heavy-bottom saucepan and bring to a boil.

  2. Reduce to a simmer and cook, stirring occasionally, until the cherries are soft and the compote is thick and syrupy, about 8 minutes.

  3. Cool to room temperature then remove the cinnamon and anise.


Use immediately or store in an air-tight container in the fridge for up to 10 days.
