INGREDIENTS
3 cups confectioners’ sugar
½ cup mascarpone cheese
½ cup coconut cream
Zest of 1 lime Pinch salt
1 teaspoon pure vanilla extract
¼ teaspoon coconut extract
Tip: if you don’t have coconut cream in your pantry but you have a can of full-fat coconut milk, open the can without shaking it first, and scoop out the fat that’s floating on top.
Directions
Beat the mascarpone cheese, coconut cream, lime zest, and salt together.
Gradually add the confectioners’ sugar, ½ cup at a time.
Add the extracts and beat for 5 minutes until light and fluffy.
